Weeknight Chicken and Rice with Tomato and Basil

Ingredients

2 tablespoons Lucini Extra Virgin Olive Oil

6 whole Boneless Skinless Chicken Thighs Salt and Peppered

1 medium Sweet Onion diced

2 cloves Garlic finely chopped

1/3 cup Primal Roots White Blend

1 jar Monte Bene Tomato Basil Pasta Sauce

1/2 cup Feta Cheese Crumbles

Directions

Heat olive oil in deep skillet over medium-high heat for 2 minutes. Season chicken thighs to taste with salt and pepper and sear for 2-3 minutes on each side. Remove chicken to plate and set aside. Reduce heat to medium; add onion and garlic and sauté 3-5 minutes or until tender. Remove pan from heat and add wine, scraping up any browned bits from the bottom of pan. Allow wine to simmer and reduce by half, about 3 minutes. Stir in 1 jar Monte Bene Pasta Sauce and return chicken to pan. Allow to simmer for 5 minutes or until chicken is cooked through. Serve over TFM Organic Long Grain White or Brown Rice and top with feta cheese crumbles.
